Easy Protein Pancake Recipe

In honour of Pancake Tuesday coming up next week, I thought this is the perfect time to resume blogging with my favourite easy protein pancake recipe! These were inspired by a cookie recipe I used to make all the time from my Home Economics book (which I kept for the recipes). Minus the sugar and butter!

These have become my go-to cooked breakfast on the weekends. They are so, so quick and easy to make and really delicious. These are high in fibre and protein and sweetened with fruit and honey.

Ingredients: Makes 2 protein pancakes

  • 50g porridge oats
  • 35g desiccated coconut (or more oats if you don’t like coconut)
  • 150g cottage cheese
  • 2 eggs
  • 1 tbsp milk (if mixture looks too thick)
  • 1 tbsp honey (optional)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • blueberries (optional)
  • pinch cinnamon (optional)
  • oil or no salt butter for frying

How to:

  1. Blend all ingredients until smooth. I like to add in the baking powder on it’s own at the end for maximum fluffiness while cooking.
  2. Pour a thin layer into preheated pan (medium heat), cooking 2-3 minutes per side until golden.
  3. When you’re finished add the blueberries to the pan and cook until the juices begin to appear and serve alongside.
  4. I also love these with fresh strawberries (extra fibre) and Greek yoghurt or streaky bacon and maple syrup.
